If you have a big enough chip advantage and are able to sit out and cash where you would like to cash (especially if the field starts to get tought), it's a very valid strategy!

Yep. This is what it really boils down to for me. But most of the time even when I sit out I'm usually just watching TV in the background while still watching the betting habits of the players. I throw away some big pairs occasionally like this, but it allows me to really get in some analysis before the late game begins.
