AK is a good hand, in fact AKs is the fifth strong hand, but you must play it carefully.
I agree with you in the fact that go allin like a maniac everytime you have this hand isn't the right way to play it, but only limp or check maybe isn't too.
If you only limp with a strong hand like this, you are giving extra chances to marginal hands to see the flop, and of course you don't want a flop like 27A rainbow and lost some chips against BB holding 27u
