I am always asked to make potato salad for special occasions.
I make it with these items. (It is always 1 large potato to 1 egg, or 2 regular size potatoes to 1 egg ratio.)
10 Potatoes
5 Eggs
Mayonaisse to taste
Salt
Do not forget to put a spoon of salt in your water because this will help the peeling of the potatoes and the peeling of the eggs a lot easier.
Put whole potatoes in a pan, top with water, throw in a spoonful of salt,bring to boil. Small boil for 1 hour. Then peel potatoes after cooking being sure to cool potato down
by running under cool water. The peeling just falls off for the most part.
Put eggs in a pan, top with water, throw in a spoonful of salt, bring to boil.
Small boil for 20 minutes. Then peel eggs after cooking being sure to cool egg down
by running under cool water. The eggshell just falls off for the most part.
Dice the potatoes into a large mixing bowl, dice eggs into same mixing bowl.
Add your favorite mayonaisse til the texture of the potato salad is to your liking.
I usually start off with 3 large table spoons, then add one or two more as needed.
This tastes so good. A variation I will do is dice 2 cooked potatoes and dice 1 cooked egg into a regular bowl. I will make 5 bowls like this. Give them to your family member at the table. Then have salt, pepper, mustard and several different jars of mayo on the table. Then the family members can add the condiments on their own, because in our family 5 family members like 3 different flavors of mayo.
Really, this is a special treat when served like this. Good eats. Some people like relish, but if they do, heck, those kind of people can buy their potato salad at the store.
