Odds = count the cards that give you the (probably) winning hand
example: you have 78d ... flop: 5d6dAh
You have 4 outs (any 4 gives you a straight) + another 4 outs (any 9 would also give you a straight) + 9 (any diamond would give you a flush) - 2 (we counted the 4 and 9 of diamonds twice) = 15 outs
Percentages = after the flop, we multiply our outs (15) x 4 = 60% chance that you win the hand
so if you flop an open-ended straight flush draw, you're almost always a favorite
If the turn is a blank, for example, the K of clubs, we have only 1 card left that could make our hand... so after the turn, we multiply our outs (15) x 2 = 30%
If the turn was the 7 of clubs, we could probably also win with another 7 (for trips) or any 8 (two pair)... so we add the 2 remaining 7's + the 3 remaining 8's to our 15 outs, we now have 20 outs ... so post-turn, that's 20 x 2 => 40 % chance to win

Btw, if you watch tv-poker, you see that the percentages are always a little different. That's because the producers know what other players have (folded), so if for example, someone has folded Kd4s ... we have only 13 outs because the King of diamonds and the 4 of spades are out of the game and cant improve my hand.
Right, fuzeeke has it correct. Basically, you should always bet/call when the bet/call to pot ratio is lower than the odds of you getting your card.
May add to fuzeeke post only that you to count on flop/turn cards which will give you the pot on the river then make simple calculation 52 - 5 cards you see(3 on flop 2 you own or - 6 on turn) / number of outs then check call to pot amount.
On google tables to help count odds can be finded, basically there many standard situations like two ended straights and flushes, so you will remember it fast and count all automatically.
